Preparation
Half fill a kettle with water and put it on to boil.Have a tall jug ready with long handled metal spoon, knife or fork in the jug. (This will absorb the heat from the boiling water when you pour it into the jug, stopping the glass from shattering.) When the kettle has boiled fill the jug half way with boiling water. Leave the metal utensil in the jug until water has cooled.

Scrub the lemons and limes under cold running water with a soft brush. Have a citrus press ready with a small glass positioned under it to catch the juice as it is squeezed. Cut the lemons and limes in half and position in press then push the handle down and squeeze the fruit. Then put all the lemon and lime skins into the jug of hot water using the metal utensil to keep the skins from floating to the top.

Leave the skins in the hot water for 15 - 20 minutes then take care to remove them with some tongs. Next, have a pan or other suitable container ready and pour the remaining hot water through the sieve and then pour the squeezed lemon and lime juice through the seive into the pan or other container. The sieve will prevent any pips and pulp from ending up in the juice that will soon be ready to drink.

Pour the strained mixture back into the tall jug and top up with cold water but not to the top of the jug(leave an inch or two) or when the sugar is added next the juice will overflow. 
 Add 16oz of sugar and stir thouroughly then taste. You may need to add more sugar until you have the right balance between sharp and sweet. Place the jug in a fridge to cool and when it is ice cold it is ready to drink.
